Condo Weekend, Life in General

Hello world! It's been so long!

It has been a busy couple of weeks out here in Colorado. I've been keeping busy with Torsten and my other extra curricular activities such as the gym, yoga, Bible study, Wesley Fellowship, and more! Things are about the same with Torsten, and he is getting bigger every day! We made our first outing to Target last week and made another trip there today. He slept a lot today, so we didn't get out for a walk, but it was still a good day. I think snow is in the forecast for tonight/tomorrow, so we will see what happens with that.

In other news, it was so awesome getting to see Beth and Brian when they visited from the 14th-19th. We did lots of fun things while they were here and made the most of it!  

Homemade Lasagna
Friday morning we went to the Village for breakfast, which was very delicious, and in the afternoon Beth, Brian, and I went on a tour of the Celestial Seasonings tea factory just down the road. It was fun seeing where all the tea is made and learning about the statistics, but the machines weren't running because all the workers were in a meeting, so that was a little disappointing. We also didn't get to experience the full effects of the mint room, because it was mostly filled with spearmint with just a little bit of peppermint. Despite those little hiccups, it was still a fun tour.We had lasagna for dinner Friday night and we made the noodles from scratch. Beth and I both made a section of noodles to add to the creation which was fun.  

Saturday morning our cousin Jake was in town so he came to eat a delicious waffle breakfast with us. It was great being able to catch up with him. After breakfast we went to watch Eric's Cyclocross race and from there we headed up to the condo in Fraser. We ran into a bit of snow driving through the mountains, but we made it safe and sound.

On Sunday, Beth, Brian, and I all went skiing at Winter Park Resort. Unfortunately, the resort just opened this weekend, so only three runs were open and we didn't get to experience the full mountain. It felt very similar to Spirit Mountain, just more spacious and natural. I haven't been skiing since sixth grade, and I think it had been a while for Beth and Brian as well, but they did great and I eventually got the hang of it. Having the fresh powder was great; it made it much more enjoyable! After skiing, we came home and ate a delicious dinner of fajitas and went to bed fairly early.

Monday was our last day up at the condo, so we just went on a short hike in a campground type area where we got some nice views of Beyer's Peak and the continental divide. One of my favorite things about being up in Fraser was that there was lots of snow and it felt like winter, but when you head back to Boulder it still feels like fall. It's nice being able to drive up to the snow when you so desire. After our hike we ate a quick lunch and then headed back to Boulder. We stopped for pizza on the way home which was delicious and interesting. There was a pizza with fig jam for the sauce which was probably the most unique flavor of the three.  

Tuesday Beth, Amber, and I all went to Torsten's PT appointment then headed back home so Beth and Brian could pack to head back to MN. :( All in all, it was a great weekend and it was so nice seeing familiar faces from Minnesota. 

Now it's back to the usual routine for the remainder of the week. As much fun as it was having Beth and Brian here, it's oddly comforting being back into the usual routine. On another note, I can't believe it's Thanksgiving next week! Time sure is flying by. As of right now, I plan on driving out to Utah for Thanksgiving (so long as the weather holds out) to spend time with some family out there. 

Anyways, I know this is a fairly brief recap from such a busy couple weeks, but if I didn't do a recap this blog post would turn into a novel! I hope you are all doing wonderful and enjoying life as we come into this exciting time of year. :)
