Weekend Overview: Pizza, Cyclocross, Church

Monday everyone!
It's
the start of a new week after an exciting weekend here in Colorado. Since my
last post, my life has been full of delicious homemade pizza, cyclocross races,
more exploring, and good company.
•Pizza:
Amber did an amazing job on her homemade pizzas. There were four
different kinds; two wheat crust (one with pears and one with veggies and feta)
and two white crust (one was Hawaiian and one with pepperoni). *There was other fancy stuff on some of the pizzas, but I just remember the major component that made up each pizza. I tried all four
and all were delicious. My favorites were the Hawaiian pizza and the one with
pears on it, both of the fruity pizzas, which I found kind of funny. I had
leftovers for dinner the next day, and it was still super yummy.
•Church: I tried out
Amber's church this Sunday, Mountain View UMC, which I liked a lot better than
the first church I went to. I will probably go back to this church and maybe
even try out their adult Sunday school class which is at 9am, followed by their
traditional service at 10:30am. They also have an 8:00am option, which is a
much smaller group that Amber usually goes to, and a 9:03am service which is
more contemporary. They were quite welcoming, and the pastor hands out a
package of popcorn for first time visitors to thank them for "popping"
in. Amber warned me about that, but I forgot until I was pointed out and given
free popcorn. Overall, I really enjoyed Mountain View and will go back, but no
church will never compare to Northwood back home; that will always be my
church. ♥

Sunday's Cyclocross races |
•Cyclocross:
I got the opportunity to go to my first ever cyclocross races this weekend in
Boulder! I unfortunately didn't get to see Amber or Eric race earlier in the
day, but I did get to see their friend Sunny race in the women's elite group (watch a video of the women their first lap here) in
the afternoon on both Saturday and Sunday. I also got to watch the men's elite
group on Sunday. It was very fun to watch and document some of the races.
During Sundays races I decided to get a fruit smoothie which I got to blend
myself via bike! It was pretty awesome, and I also got it on video which you
can watch here. Overall, it was very fun to watch and experience the cyclocross
races. Cycloross is something that I think would be fun to do, but I kind of
lack the self-confidence, assertiveness, and funds to be able to do it. I will
probably just stick to biking on a nice, solid, flat surface. :)
*Side
story: while I was walking back and forth to my car, which was about .75 miles
away from the actual races, I stopped to chat with a (fairly attractive)
security guy who said hi earlier. It turns out that he lives in Denver, but
he's actually from Chaska, MN! I thought that was pretty cool. Looking back on
it now, I should have said something about wanting to visit Denver to go to an
Avalanche game, but...I didn't. Learn from my mistakes I guess!

After
the races on Sunday, the five of us (Amber, Eric, Torsten, Sunny, and I) went
out to eat at a little place called West End Tavern. They had a cool map of the US with numbers labeling which state has which livestock, produce, etc. which was neat. I ordered a veggie burger with
a side salad which was pretty good! There were also yam chips with guacamole
which were good, and Sunny got a crock of homemade mac n' cheese which
was amazingly cheesy and delicious. I think it is safe to say that we
all left with full and happy bellies.
Overall,
it was an enjoyable weekend! This week Amber goes back to work part time
starting tomorrow, so I'll get to spend a lot more time with Torsten which will
be fun. I will have to introduce him a blog post very soon!
